Quinoa Recipe (Pronounced keen-wha re-see-pee)


Adapted from this recipe changes made mostly because I didn't feel like eating some of what was in there and added stuff I did feel like eating.
Quinoa: 1c Quinoa
1c broth, 1c water
Bring liquid to a boil, add quinoa and reduce heat. Simmer for 20 minutes [or less] and turn off heat.

Sauce: 3 cloves garlic finely chopped and or even pressed, sauté in olive oil with about 1 Tbsp ginger [fresh preferred, powdered is fine too-adjust accordingly] warm until you start smelling the spices. Add 1 can of red beans[although I'm sure any can of beans will do], drain most of liquid but not all. Sauté, stirring constantly. Once bubbles start forming add a handful of brown sugar [or natural sweetener] mix until dissolved.

Combine sauce and quinoa for a delicious sort of healthy and good fiber meal-don't forget the veggies[which may or may not be added to the sauce depending on your mood at the time].
